Garden Marinara Sauce

Chef Tony is known for his delicious and flavorful marinara sauce that is made with fresh ingredients straight from the garden. It is a must-try because it captures the essence of fresh, homemade cooking. The sauce is versatile and can be used in a variety of dishes, from pasta to meatballs to eggplant Parmesan. 1 large onion, diced

4-6 cloves of garlic, minced

12 San Marzano tomatoes, peeled and seeded

1 Tbsp. dried oregano

2 Tbsp. olive oil

For the Birds

Heat a large saucepan over medium-high heat. Add the oil, then the diced onion, and sauté until the onions are soft, about 5-7 minutes. Add the minced garlic and continue sautéing for an additional minute until fragrant. Stir in the dried oregano. Then add the peeled and seeded tomatoes along with a generous pinch of salt. Bring the sauce to a simmer, then reduce the heat to medium-low. Let it simmer for 20-30 minutes. Taste and add For the Birds as needed. Continue simmering on low heat until ready to serve or allow to cool before storing it in the refrigerator or freezer.
