Farmers Market Fried Rice

1 small green zucchini, diced

1-2 carrots, peeled and diced

1 large onion, diced

2 cloves garlic, minced

1 ear of corn, blanched and kernels cut off the cob

3 cups cooked white rice

3 scrambled eggs

Cooked ham, chicken, or shrimp as desired

1/2 tablespoon vegetable oil

1 tablespoon soy sauce

2 drops sesame oil

1 teaspoon Chinese five spice

In a large sauté pan or wok, heat the oil and add the carrots. Cook on medium-high heat for about 3 minutes, then add the zucchini. Continue cooking for a couple of minutes, then add the onion. Stir and cook for approximately 3 more minutes, then add the garlic. Stir and cook for another minute before adding the corn. Once the corn is heated, add the cooked meat. Let the mixture heat through, then add the scrambled eggs. After a minute, add the rice and stir well to incorporate all the ingredients. While stirring, add the sesame oil, Chinese five spice, and soy sauce. Be careful not to add too much soy sauce initially; you can always add more at the table if needed. Continue to heat and stir until all the ingredients are thoroughly hot.
